Crafted from ancient vineyards cultivated and harvested for centuries, Joseph’s Ancient Heirloom Wine represents the highest expression of ancient viticulture. Our grapes originate from heritage vines that have adapted naturally over generations, developing exceptional nutrient density and extraordinary flavor complexity. These vines—mostly between 100 and 300+ years old—grow in mineral-rich soils untouched by synthetic chemicals, allowing the fruit to mature in perfect harmony with its environment.
In part because of its old age, and in part because of our vineyard's protection from exposure to pesticides, fertilizers and other dangerous chemicals, our grapes are strong enough to withstand and convert to a consistently good wine with natural fermentation and without the use of any added Sulfites or Preservatives.
Most grapes, largely due to pesticides, fertilizers, hybridization and other modifications, lose their natural enzymes that help stabilize the wine during the fermentation process. This then requires wineries to add sulfites, which in turn ruins the health benefits of the fermentation and causes that common acidic "shoepolish" aftertaste and feel.
